Keto Egg McMuffins

keto-egg-mcmuffins-thumbnailI have a hard time planning ahead for anything, especially meals. I tend to not consider what I’m going to eat, until I’m hungry. The problem with this approach is that it is very easy to stray from the eating habits I’m striving so hard to maintain. I came across the idea of making Egg McMuffins “keto” style recently and it has completely changed my mornings!

If I haven’t made my bullet-proof coffee in the morning, I’m tempted to sneak a bit of the flavored coffee creamers out of the office fridge. What about breakfast? Stale donuts from the lunch room? Yah, it happens. But I’d rather it happened less (i.e. never). Breakfast is a particular issue for me, as I am oh SO not a morning person.

I make these Keto Egg McMuffins on Sunday, portion them out for the week, 2 each in zip-lock baggies and the best part is they are less than 1 carb each. 15 seconds in the microwave to heat up and your good to go!

Keto Egg McMuffins

Ingredients

12 Eggs
1/4 c. Heavy Whipping Cream
Shredded Pepper Jack Cheese
3 Slices of Canadian Bacon
Salt
Pepper
Garlic Powder
Any other seasoning that makes you happy
Preheat oven to 375

Instructions

  1. Preheat oven to 375
  2. Line muffin tins with silicon liners and spray with non-stick cooking spray (I like the butter flavored kind). In each liner sprinkle in cheese and chopped up Canadian Bacon. Whisk up the eggs, heavy whipping cream and season as you please. Pour into the cups, but don't over fill, they fluff up rather nicely!
  3. Bake for 25-30 minutes or until done. Take them out and let them cool. Try using different meats and cheeses for a variety.
